Maple Oat Cherry Shortcakes

Yesterday was my 23rd birthday! Arlo and I celebrated by going out to eat for the first time since Covid, it was pretty different than what eating out used to be, but it was still really nice. The food was great.

In honor of my birthday, I wanted to share this recipe for cherry shortcakes made with maple oat biscuits. They are so good. Im choosing to post this for my birthday because when I was a kid, we used to have strawberry shortcakes for my birthday, they’re my favorite. So I made a sort of grown up, more elevated version of that.

These are so good. I don’t even know where to start. They’re not an overwhelmingly heavy dessert. They’re made from light, fluffy maple oat biscuits that are good enough to enjoy on their own, or with a smear of honey butter. They have a really warm, homey flavor from the cinnamon and maple and it pairs perfectly with the cherries. While cherries are absolutely perfect on their own, for this recipe I went a step further and mascerated them in brown sugar and lemon, they came out absolutely perfect. The maple brown sugar whipped cream ties everything together and just adds another fluffy, creamy texture.

Tips and Tricks

  • If you don’t have a biscuit cutter, you can use a cup instead.
  • If you want to add more color you can use a mix of yellow and red cherries.
  • The butter and milk have to be VERY cold in this recipe, otherwise the biscuits won’t rise properly,
  • Make sure the cream you use for the whipped cream is VERY cold or it won’t whip propperly.
  • These make a great addition to your next brunch party!

Substitutions and Add Ons

  • Cherries can be substituted for any berry you like, or apples. If using apples, consider baking them in brown sugar and lemon juice to soften them up slightly.
  • Maple can be substituted for honey.
  • Milk can be substituted for buttermilk.
  • Brown Sugar can be substituted for granulated sugar.

Ingredients

For the Biscuits

  • 1 1/2 C All Purpose Flour
  • 2 Tbsp Dark Brown Sugar, packed
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Kosher Salt
  • 1 tsp Cinnamon
  • 1/2 C Old Fashioned Oats
  • 6 Tbsp Unsalted Butter, very cold
  • 1/2 C Milk, 2% or whole
  • 3 Tbsp Maple Syrup

For the Topping

  • 1 Tbsp Unsalted Butter, melted
  • 1 Tbsp Maple Syrup

For the Cherries

  • 1/2 lb Red Cherries
  • 1 Tbsp Brown Sugar
  • 1 tsp Lemon Juice

For the Whipped Cream

  • 1/2 C Heavy Whipping Cream
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Brown Sugar
  • 1/4 tsp Kosher Salt

Directions

  1. Preheat oven to 415°F.
  2. In a medium bowl, combine flour, brown sugar, baking powder, salt, cinnamon and oats.
  3. Add butter and using either a pastry cutter or a fork, cut it in until small crumbles begin to form.
  4. Add the maple syrup and milk to the bowl and mix until just combined.
  5. Turn the dough onto a floured surface and using your hands, press the dough into one big lump.
  6. Press the dough out to 1 inch thick.
  7. Then fold the dough in thirds, towards the center like folding a letter.
  8. Press the folded dough back out to 1 inch thick.
  9. Repeat steps 7 and 8 two more times.
  10. Using a well floured biscuit cutter, cut the dough into 1 inch thick rounds and place them on a parchment lined sheet tray.
  11. Melt together the topping, 1 tbsp unsalted butter and 1 tbsp maple syrup and brush the liquid on top of each biscuit.
  12. Place the biscuits in the oven and bake 12-15 minutes or until risen and golden brown on top.
  13. In the meantime, remove the pit from each cherry.
  14. Place the pitted cherries in a medium bowl and add brown sugar and lemon juice, Stir just until the cherries are coated with sugar, cover and refrigerate at least 20 minutes.
  15. Make the whipped cream by combining very cold heavy cream, brown sugar and maple syrup in medium bowl.
  16. Using an electric mixer fitted with the whisk attatchment, whip the cream until peaks form.
  17. Allow the biscuits to cool slightly before serving.
